Would love to have the menu(s) in the footer be able to display in an accordian or dropdown style menu on mobile in particular. Footer menu on mobile looks very long

Footer links should ideally be top level links without dropdowns. Links should be page like terms of service, privacy policy, contact us, about us, etc. It's best SEO practice to avoid repeating all the links you have in your header. Instead of filling up the footer with too many links, I'd recommend making your header stick to the top of the page (there's a setting in the theme settings for this) so the header links are always available to your users.
